01 · The Kitchen

Everything starts from scratch.

We age our own steaks. We cut them by hand. Stocks, sauces, dressings, breads and desserts are made here, the long way — because there isn't a shortcut that tastes as good.

Chef Vatche Moukhtarian trained at the San Francisco Culinary Academy, cooked under Roger Morris, and brought it all home to Fresno in 2006. Refined by fire, rooted in Fresno.

03 · The One Everybody Orders

Bread pudding. No apologies.

It has outsold everything else on the menu for years. We make it here, we serve it warm — and at the café we turn it into French toast in the morning. If it's your first time, order it before you think you're too full.

Mornings run on the Café.

Brunch Menu

We cut our own bacon. We hand-cut our potatoes. We crack real eggs — never liquid. We make our own butter.

Chef quality, without the markup. The Café opens at 8 AM, Tuesday through Saturday — smoked salmon bagels, pork belly bowls, avocado toast, and the famous bread pudding reborn as French toast with fresh berries.

Counter service until 1:30. Walk in, order, grab a table — the patio is first come, first served.

05 · Our Coffee

We didn't buy a coffee program. We built one.

Every cup here is Sanctuary Coffee Roasting — specialty coffee Chef Vatche roasts himself, in small batches, at our roastery in Clovis. It lands at the bistro usually within a week of the roast date.

Which means the espresso in your after-dinner drink came from the same hands as the food.

A wine list built around Paso Robles and the Central Coast, cocktails made without shortcuts, and a bar you can sit at alone on a Tuesday and still feel looked after.
